A new recipe shared with me by Christina

for

CHOCOLATE CHEESECAKE TRUFFLES

Makes approx 36


200g dark chocolate, chopped
250g cream cheese
1/4 cup icing sugar, sifted
1 tablespoon Irish Cream Liqueur
1 x 200g packet Tim Tam biscuits, crushed


1. Place chocolate in a microwave safe bowl. Cook in high power for 40 seconds, stir then cook another 30 seconds. Stir until chocolate has melted.

2. Beat cream cheese and icing sugar until combined. Stir in liqueur and melted chocolate. Chill until firm enough to handle.

3. Roll teaspoonfuls in biscuit crumbs/chocolate sprinkles or chocolate icing sugar. 
Refrigerate at least 24 hours.
